The traditional cuisine is remarkable for its simplicity in its preparation and the quality and freshness of its food. Excellent raw materials have enabled to cook over centuries original and exquisite recipes.

Similarly to the rest of the Canarian gastronomy, the differences of the cookery in Lanzarote are based on the abundance of marine species.

Visitors will discover the “Enyesques” (snacks) such as the famous “papas arrugadas” (salted potatoes), “ropa vieja” or “carajacas”, usually eaten before “caldo de pescado” (Canarian fish soup) and “potaje de berros” (watercress stew).

Visitors will be able to taste meat main courses such as “conejo en salmorejo” (rabbit in a special sauce) or “pierna asada” (leg of pork grilled). In the case visitors prefer a fish main course, they can taste “vieja sancochada” (boiled sea bream) or “atún encebollado”(tuna fish in a sauce with cooked onions).

To sweeten their mouths, visitors can taste any of the following desserts: “Bienmesabe” (a cream made of almonds, eggs and sugar) and “huevos mole” (dessert especially made of eggs, sugar and lemon). The delicious Canarian bananas are also an excellent option for the dessert.

There is also a wide variety of cheese in Lanzarote, fresh white cheese made of goat milk and with a soft and slightly acid flavour according to the area of the island where it has been prepared.

“Queso frito” (fried cheese) is a very popular recipe in the island.

The typical food of Lanzarote are usually eaten with “gofio”, a type of flour made of milled wheat or maize. This flour has been a basic element in the diet of the Canarians over centuries. There are more elaborate recipes such as “escaldón de gofio” (gofio kneading with boiling soup), “gofio amasado” (gofio kneading as a pastry) or modern recipes such as “mus de gofio” (gofio mousse) or “flan de gofio” (gofio crème).

These dishes are usually eaten with “mojos” (spicy sauces) and “adobos” (marinades). These are sauces especially made with garlic, oil, vinegar and spices. “Mojo rojo” (red spicy sauce) is mainly taken with meat and salted potatoes and “mojo verde” is especially eaten with fish dishes.

All the dishes can be taken with a good wine with guarantee of origin and quality from Lanzarote.
